With frozen berries or bananas, you can make a special treat that can be put in the freezer in the morning and devoured in the evening or on the weekends.


1 large or 2 small canning jars

2 cups of berries or bananas*

1 lemon, for juice

3 tablespoons water


From the berries: pour the berries into a strainer and rinse.

Place the berries in a medium sized pot and add the water and a cup of sugar for each quart of berries. Bring to a boil.

When the liquid starts to bubble, remove from heat and either place a lid on the pot or remove the lid for a minute to allow the liquid to foam a bit.

Place the whole pot in the fridge. You can keep it in the fridge overnight to chill or keep it on the counter for 4 to 6 hours and then you’ll be in business to eat.

From the bananas: cut off the top of the banana and place in a medium pot with the top of the banana cut side down. Do not peel the banana or slice. Peel a light layer of skin from the bottom of the banana and set aside.
